Unfortunately, you really can't substitute for wine if the recipe calls for more than 2-3 tablespoonsful. And even "non-alcoholic " wines contain tiny amounts of alcohol. I suppose you could try a broth of some kind -- fish or vegetable or chicken -- but you just wouldn't get the flavor of the best mussels recipes. Don't use white grape juice as the site below suggests. It really won't work.

Chicken stock is a great alternative for white wine to cook with.

Do you have vermouth? I love that in cooking. I definitely wouldn't use chicken stock though. I do know it's sometimes recommended. But it can be so high in sodium, it's just not healthy. If the reason is you don't want to use alcohol (which does not ever completely cook out), there are non-alcoholic white wines, or you can use white grape juice.

Any sort of broth or stock is fine! What you are after is a flavorful cooking liquid. The simmering liquid is going to cook the mussels, and will lend and absorb flavors with them, and then you reduce for a sauce to give a sauce to marry the entree to the rest of the meal. Since wine is an acid, it would have added a brightness to your food that broth isn't going to give. You may want to add some citrus, parsley, or a dash of a gourmet vinegar to replace that zing, either cooked in, or as a finishing flavor or a garnish.

Chicken or veggie stock. Dry vermouth. Red Wine. Sherry.
