Question: Can anyone recommend a good beer/wine pairing?
(Posted by: James Z on 2009-09-18 10:50:04)
I have a surplus of chicken in the house, so I'm making poached chicken breast with, lemon butter sauce, and either crisp green beans or spinach au gratin(a random assortment, but im trying to use up a lot of excess food). Any recommendations for a good beer and wine to go with this? |

The best beer I think to have with chicken are light ones. Heavy ones goes with red meats, just as red wines go with red meats. Have you ever had Sam Adams Summer Ale? I always have that with dinners, and it has a citrus taste to it (compliment the lemon butter). For wine, a light white wine, or I would prefer a semi sweet Riesling. Barefoot Riesling is really good if you like your wine a little sweeter, and Yellowtail Chardonnay is very nice too. All Yellowtail wine is really good, and Barefoot wines have won awards, and they're good as well, and affordable. |

Even though I don't drink it for acid reflux reasons, I'd pick a good white to go with that. Try Mondavi Chardonnay. And a beer would be Stella Artois, just because it's my fave:) |

As a rule of thumb with beer you want to compliment the food's flavor with that of the beer. Generally this is achieved through finding common flavors and playing off the richness of the food vs. that of the beer. So for chicken with a lemon butter sauce a beer of medium body and citrus tones is what I'd go for. The previous recommendation of Sam Adam's Summer Ale was a good choice but you could also commonly find Hoegarrden and Blue Moon as comparable choices. These beers will also pair fairly with the au gratin potatoes. In my mind a beer like Southern Tier's Hop Sun would be ideal for the chicken but it may be difficult to find and not go as well with the potatoes. A beer using Sorachi Ace hops (lemony in flavor) would also be a good choice but I can't think of widely available examples. |
