Distilling. Brandy is distilled wine, whiskey is distilled beer. the object is to heat the wine/ beer enough for the alcohol to evaporate to a vapour and then to condense back to a liquid of a higher alcoholic strength with the characteristics of the wine/ beer. When distillation has finished and the spirit is ready to be taken out of the still, then the first and last part of the liquid, commonly called the heads and tails, is discarded because it is not a potable product. 1 of 2 things happens with this, it is either sent off for further rectification for industrial purposes or it's put back into the still to be redistilled. This happens more in pot distillation (single batch) rather than coffey distillation(continuous). |
