Ideally, if you are building from the ground up, the best place to put a walk in wine cellar would be in the basement in a room with no windows. I have a friend who owns a wine cellaring business in downtown Toronto and on his website he has all the details on basic wine cellaring. Here are the four key points he mentions: • away from direct sunlight, • temperatures between of 4ºC and 18ºC (40ºF and 65ºF), • temperature does not fluctuate more than 2-3ºC (5ºF) once annually, and • humidity levels are greater than 50%.
