Wine is a wonderful ingredient to add flavor to our meals. Cooking with wine means using wine for marinating, in reduction sauces, or as a flavoring. Most recipes indicate what type of wine to use. There used to be a saying that you should never cook with wine you wouldn't drink. But I heard one of Australia's top chefs say recently that that is just snobbish idiocy. Edit: I meant to add that you should cook with dry wines, not sweet. Red with beef & lamb etc & white wine with chicken in most recipes

There is no restrictions on what wine you can cook with. Even Boones stawberry-hill could be used (although, with only great skill). Always shoot for your flavor goals. Use something sweet, the sauce/ marinade will have a touch of sweet, etc. . . . I use the traditional guidelines most of the times, but I never limit myself. Give it a try. If you don't like it, don't do it again. At least you know.

I've always used the following guidlines when cooking with wine: If I'd drink it, I'll cook with it. I would never use "cooking " wine which has salt added to it to help with flavoring. Really, it's just disgusting. Sauvignon Blanc:known for having sort of an herby flavor I would use this wine in dishes with lots of herbs Zinfandels: Sort of fruity, great for fruit sauces Chardonnay has sort of a buttery taste when cooked with. When it comes down to it, wine tastes good with just about every meat. My mother marinates turkey breast in her favorite white wine. It's all about being creative!
