If you have Marsala or Madeira wine they are both fortified wines although taste a little different than port. Or if you have any sweet reds they can replace. If you pick a dry wine, make sure it is fruity. Since the recipe only calls for 3/ 4 cup, I think Merlot would do fine but the sauce might have a slightly less sweet flavor.

Yes, but make sure it's a wine you would drink. Never cook with a wine you wouldn't drink.

Port wine is fairly sweet, so most reds wouldn't really match up too well. you could look at desert wines, or possibly merlot would work, but you would want to reduce it significantly to like 1/ 2 to thicken and enrich the flavor
